The date (Phoenix dactylifera) is a sweet tasting fruit which grows on the date palm, originating in the Middle East and African Regions of the world. There are a variety of date palm species and over 14 varieties of date fruits. Dates may be one of the top 10 foods you should eat. You can use them in so many different recipes (sweet potatoes, salads, desserts!) and they have a long shelf life. The list of various fatty acids, minerals, nutrients, animo acids, vitamins, elements... is so long, this fruit is amazing! Mazafati Dates Refined into the following subclasses: 1) subclass non-reducing sugars featuring sucrose and sucrose like sugars, 2) subclass reducing sugars and derivative alcohols, lactones and acids, 3) subclass TCA cycle Rotab Mazafati Bam encapsulating di and tri carboxylic acid intermediates, 4) subclass glycolysis capturing phosphorylated sugars as well as key product pyruvate and derivative lactate, 5) subclass sugar dehydration encompassing products from dehydration of fructose and glucose.

Dates are tall, straight-trunked palms, reaching 60 ft, with trees up to 30 ft used in cultivation. Trunks reach 3 ft in diameter, retain persistent leaf bases for years, and produce offshoots or suckers either at the base or higher up. Leaves are 10-15 ft long, pinnately compound palm fronds” with spines occupying the lower third of the rachis, and leaflets the distal two-thirds. Leaves are long-lived, 3-7 years, and persistent when they die. Mature palms have over 100 leaves, producing 1-2 new leaves per month. About 100-200 leaflets are found on each leaf, up to 3 ft long, ½ to 2.5″ wide, folded longitudinally, with entire margins.

Dates are naturally wind pollinated but in both traditional oasis horticulture and in the modern commercial orchards they are entirely pollinated manually Natural pollination occurs with about an equal number of male and female plants. However, with assistance, one male can pollinate up to 100 females. Since the males are of value only as pollinators, this allows the growers to use their resources for many more fruit producing female plants. Some growers do not even maintain any male plants as male flowers become available at local markets at pollination time. Manual pollination is done by skilled labourers on ladders In some areas such as Iraq the pollinator climbs the tree using a special climbing tool that wraps around the tree trunk and the climber's back to keep him attached to the trunk while climbing. Less often the pollen may be blown onto the female flowers by a wind machine.

The largest production of dates is in Egypt, where production has increased from 439,539 t in 1982 to 1,170,000 t in 2005 (16.9% of worldwide production). In UAE, there were about 1.5 million date palms producing 8400 t when the country was founded in 1971. This has increased more than 90-fold to an estimated 18 millions date palms producing 760,000 t in 2005. Currently, UAE has the largest date tissue culture (TC) facility, where more than 100,000 TC date palms are produced annually, because offshoot production cannot keep up with the demand for new trees to plant ( Date Palm Tissue Culture Laboratory, 2006 ).
